Baked Oatmeal















Breakfast is my favourite meal of the day...it makes early mornings worth getting out of bed for... and, if you have the time, this recipe from Super Natural Every Day is delicious.

Serves 6.
Ingredients
2 cups rolled oats
½ cup walnut pieces
1/3 cup natural cane sugar or maple syrup, plus more for serving
1 teaspoon baking powder
1½ teaspoons ground cinnamon
pinch of fine-grained sea salt 
2 cups milk
1 large egg,
3 tablespoons unsalted butter, melted and cooled
2 teaspoons pure vanilla extract
2 ripe bananas, sliced
1½ cups berries
Directions
Preheat oven to 160ยบ with rack in upper third of oven.  Coat a  baking dish with butter.

In a small bowl, mix together the oats, half the walnuts, sugar (if using), baking powder, cinnamon and salt.  Set aside.

In another bowl, mix together the milk, egg, half of the butter, vanilla, and maple syrup (if using).

In the bottom of the prepared baking dish, spread the bananas in a single layer and sprinkle 2/3 of the berries on top.  Scatter the oat mixture on top of the fruit, and then drizzle over the milk/egg mixture. 

Give the pan a couple of whacks on the kitchen side to move the milk mixture through the oats.  Sprinkle the remaining berries and walnuts on top.

Bake 35-45 minutes until the oatmeal is set and the top is a golden brown.  Let cool a few minutes before drizzling the rest of the melted butter on top (or not).  Serve with an extra sprinkle of sugar or drizzle of maple syrup, if desired.

Lovely with a dollop of Greek yogurt! Enjoy.
